Ingredients:
2 egg whites
½ cup sugar
¼ tsp vanilla
dash of salt
¼ c nuts
Directions:
Chop nuts very fine
Beat egg whites until stiff but not dry
Beat in the sugar, a little at a time
Fold in the vanilla, salt and nuts
Drop by teaspoonfuls on ungreased letter paper (parchment paper)and let stand
until the surface is slightly dried
This will take several hours or overnight
Bake in slow over (250-275) until firm and slightly browned
Remove from the paper with a spatula
1 cup shredded coconut may be used in place of nuts
